Baked Cherry and Walnut Stuffed Apple with Caramel Sauce

Ingredients:

1/2 Cup Apple Cider

1/4 Cup Dried Cherries

1/4 Cup Dried Raisins

2 Tablespoons Honey

1/4 Cup Slivered Almonds

1 Tablespoon Cinnamon

2 Almond Biscotti or Cookies (Crushed)

6 Granny Smith Apples (peeled and cored)

2 Tablespoons butter

Directions:

Preheat oven to 350 degrees.  Mix together first 7 ingredients in a small bowl.  Place apples in baking dish and stuff the cored apples with dried fruit mixture.  You will have left over mixture and place on top of apples and in pan.  Place butter on top of the apples and bake for 30-40 minutes.

Top with your favorite caramel sauce spiked with some cinnamon and serve with your favorite vanilla ice cream.
