1/2 Cup Apple Cider
1/4 Cup Dried Cherries
1/4 Cup Dried Raisins
2 Tablespoons Honey
1/4 Cup Slivered Almonds
1 Tablespoon Cinnamon
2 Almond Biscotti or Cookies (Crushed)
6 Granny Smith Apples (peeled and cored)
2 Tablespoons butter
Preheat oven to 350 degrees. Mix together first 7 ingredients in a small bowl. Place apples in baking dish and stuff the cored apples with dried fruit mixture. You will have left over mixture and place on top of apples and in pan. Place butter on top of the apples and bake for 30-40 minutes.
Top with your favorite caramel sauce spiked with some cinnamon and serve with your favorite vanilla ice cream.
This is catering comfort food style! I had so much fun planning and designing this event.
Here is what we had for appetizers: mini leek and tomato soup shots with caramelized onion and white cheddar grilled cheese, mini chicken pot pies, mini white chili shots with cornbread, mini buffalo chicken lollipops, mini beef wellingtons, mini caesar salad cups, mini apple and onion goat cheese tarts.
Here is what we had for dessert: mini raspberry and strawberry shortcake spoons with cinnamon whipped cream, mini peppermint brownie bites, mini apple pies, mini tiramisu.
We also had a treat bar with mini gingerbread men, peppermint oreos, sprinkle chocolate and chocolate and pretzel popcorn.
