Pear and Cheese Ravioli

These are truly to die for!  One of my favorite things in Italy was pear and cheese ravioli; a unique slightly sweet ravioli that melted in your mouth.  I developed a recipe that is so decadent and delicious you will be addicted at first bite.  The filling is slightly sweet because I roast the pears with a touch of brown sugar and cinnamon and salty from the four different types of cheese I use.  You can order these and other flavor raviolis by emailing megan@plateitupbymeg.com

Easy Appetizers

Mini puff pastry pizzas are so yummy and a great option for an easy appetizer.  

Recipe Follows:

Ingredients:
Puff Pastry
Can of your favorite tomato sauce
Fresh mozzarella 
Fresh basil
Salt and Pepper
Directions:
Thaw puff pastry and roll out evenly.  With a circular cookie cutter cut circles and poke the whole circle with a fork.  Add tomato sauce, fresh basil, mozzarella, salt and pepper.  Bake on a cookie sheet at 400 for 7-10 minutes until top is golden brown.  Enjoy!
Hint:  
You can add any toppings you think your guests will enjoy or even do different types of pizza like BBQ chicken or Thai chicken.

Breakfast for Dinner

Don’t forget breakfast is always a good dinner option. A mixed vegetable omelet with baked sweet potato fries is a great way to satisfy that breakfast craving later in the day!

Vegetable Omelet

Ingredients:
Your favorite vegetables (I used tomato, onion, mushroom, spinach, and eggplant)
Avocado
Garlic
Provelone (shredded)
4 Eggs
2 T Water
2 T olive oil or utter
Salt and pepper to taste

Directions:
Sautee your favorite vegetables in 1 T olive oil or butter for 5-10 minutes or until vegetables are soft and cooked through. Season with salt and pepper and set aside. In a mixing bowl beat eggs and water for 1 minute. On medium heat in a non-stick sautee pan use 1 T olive oil or butter and pour egg mixture into pan.

Stir vigorously with rubber spatula for 5 seconds. As soon as a semi-solid mass begins to form lift pan and move around until the excess liquid pours off into pan. Using your spatula move around the edge of the egg mixture to help shape into round and loosen edge. Let sit for 10 seconds without touching. Place 1/4 cup of filling and cheese onto 2/3 of surface of omelet.

Shake pan to loosen from pan. Left up the far edge of the pan fold over 1/3 of the omelet without filling. Slide omelet onto plate, top with fresh sliced avocado and enjoy!

Lakers and Such Birthday Cake

I had so much fun creating this cake. This was for a young guy turning 28. We decided to mix in some of his favorite things and celebrate his wife and his 6 month wedding anniversary. I decided to do decorative cookies to pull the whole thing together. We chose his favorite lakers players, his softball team and a wedding cake to incorporate the anniversary. He loves Reese’s, so I made a peanut butter cake with peanut putter filling and chocolate frosting. SOOOOO good!
