I did a really fun event this past weekend for one of my dear clients who I cooked for when she was recovering from serious back surgery. I was so thrilled to cook for her 1 year recovery get together! We did an heirloom tomato, arugula, roasted corn and caramelized onion salad with prosciutto wrapped shrimp, spiced pepitas and a citrus vinaigrette. The next course was a pear and cheese ravioli with a cinnamon bechemel and pear chutney. For the main course I did a spiced rubbed pork tenderloin with a bourbon maple chili glaze, roasted winter vegetables with cotija cheese and panchetta and cilantro drizzle. For dessert we did a chocolate lava cake with raspberry sauce and a white chocolate garnish. Overall I had a blast celebrating a year of great recovery! Sorry for the poor picture quality.
